A plate of Banh Cuon Tom Thit always completes my trip down to Richmond, where I will spend a good couple of hours shuttling in and out of the little convenient stores. Also known as rice noodles with pork and shrimp, this Vietnamese appetiser is a colourful mix of rice noodles, fried mung bean balls, bean shoots, pate and home-made fish cake. This is a great alternative to beef pho, which fills you up way faster. If you still need your daily carb intake, have Banh Cuon Tom Thit with a bowl of hot fluffy rice!
